Recipe: Low Carb Stuffed Peppers with Cream Cheese, Bacon, Egg, and Spinach

Preheat Oven to 350.
Seed two peppers and cut them in half.
Place a few pieces of spinach in each one.
Spoon 2T whipped (or regular) cream cheese into each one, on the open side.
Crack an egg into each on the closed side (the round one- otherwise, it will spill onto the cookie sheet).

Cut four bacon slices into three pieces.
Place on each pepper.
Bake at 350 for 20-30 minutes, depending on how well done you like your bacon and the egg.

Option: Top with slided cheddar and melt it under broiler for an additional 3-5 minutes.
