Food Babe's recipe for coconut milk ice cream was inspiration enough for me to try to make my own coconut milk ice cream. We modified her recipe enough that I wanted to post it here. Plus... my husband even likes it!
Homemade Banana Mint Coconut Milk Ice Cream1 can/ carton coconut milk
3 frozen bananas
pinch sea salt
1 T vanilla (store bought or homemade)
1 t. peppermint extract
2 full droppers mint ChlorOxygen (green powder would also work if you double the peppermint extract)
2 t. almond extract
1/2 cup soaked and dehydrated almonds, optional (cacao nibs would also work)
Mix bananas and coconut milk in food processor until smooth. Add other ingredients. Place into ice cream maker until it looks like soft serve, about 20 minutes.
